They have been farming organically from the beginning, harvesting only by hand.
The original 30 hectares of the estate were planted with 26 hectares of vines and 4 hectares of olive trees. In 2009, 8 hectares of vines were purchased in Saint-Paul-de-Fenouillet and 7 hectares in Caudiès-de-Fenouillèdes. In 2017, the estate was increased to its current size with 7 hectares in Maury.
