The soil is based on the marl known as Saint Doulchard, a Kimmeridge limestone, practically unique in Sancerre and these are the foundations that give the wines their inimitable character. Fermentation takes place at 18-23 °C, 50% in fermentation vats and the other half in new wooden barrels. They are aged on fine lees for 7-8 months.
