Patrick Piuze's wines undergo the entire vinification and ageing process in tanks, while for Premier Cru and Grand Cru wines everything is done in 228 litre tanks. No cultured yeast is ever used, nor temperature control. All wines undergo a natural malolactic fermentation and are bottled before the following year's harvest, whether they are village wines or Grand Cru. It is consistent, precise and pure Chablis.
